YOUR LAB RATISSERIE祐蘭是法甜师吴焕新在汕头开创的一个法式甜品品牌,继祐蘭获得成功后,他又与妻子在汕头的东海岸边开设了一家创意料理融合餐厅Solar Term。餐厅理念源古人依时而作、依节而食的文化,使用融合了地、山、海等食材来创造以24节气为主题的餐食体验。这一次,MAS对餐厅的外建筑与室内结构进行了改造与诠释。


YOUR LAB RATISSERIE (Youlan) was a French dessert brand founded by French sweet master Patrick Wu in Shantou. After its success, Patrick Wu and his wife opened a creative fusion cuisine restaurant, called Solar Term, on the east coast of Shantou.

自古潮汕地区“地狭人稠”,拥有狭长的海岸线,依海而立,靠海而兴。在项目构思之初,设计团队游历了美丽的南澳岛,咸湿的海风拂面,远处准备归港的渔船,海滩边上的礁石相互支撑依靠。这深深的吸引着我们,于是试图将“大海、海滩、礁石”等自然景观融入进本次空间设计中。


Since ancient times, Chaoshan has been “a small but densely-populated land”. With a long and narrow coastline, it stands by the sea which, in turn, helps the local economy surge. At the early stage of developing the concept, the design team visited the beautiful Nan’ao Island, where the salty and wet sea breeze blew, the fishing boats in the distance were ready to return to Hong Kong, and the reefs on the beach supported each other. We were so drawn to the charming sight that we tried to integrate the natural landscape of “sea, beach and reefs” into our space design.

使用属形体模拟海滩礁石的演化,并通过几何切割异面形体的依偎作为建筑的主入口和围墙,营造进入餐厅的第一感官体验。在一层增设的大斜顶,使其与原建筑关系更为紧密,通过体块的缩放和断裂,视觉冲击更强烈。户外屋顶拥有将近三米的挑空,作为餐饮空间的室外长廊,做到与自然环境更好的融合,也使主入口步行到室内拥有一个缓冲地带。

The metal shape is used to simulate the evolution of beach reefs, and the structure of polyhedrons cut by geometry is used as the main entrance and enclosure of the building, creating a good first impression when customers are entering the restaurant. The large inclined roof added on the first floor makes it more closely related to the original building. Thanks to the scaling and fracture of the block, the visual impact will be stronger. The outdoor roof has an extra space of nearly three meters. As an outdoor corridor of catering area, it can better integrate with the natural environment, and also provide the main entrance a buffer zone to walk indoors.

就餐区和中庭咖啡区需要隔断,而设计师更希望使用“体块”来代替墙面,异面体块的切割和堆叠,模拟了大海与礁石密不可分的自然关系,以此构成更开放的空间隔断。


The dining area and the coffee area in the atrium need to be separated, and the designer prefers to use “blocks” to replace the wall. The cutting and stacking of heterogeneous blocks simulate the inextricable natural relationship between the sea and the reefs, so as to form a wider space partition.

大面积的地面与墙面自然原始的肌理质感,让整体空间显得静谧而柔软。而金属体块的加入让空间在质地上形成“新”与“旧”的碰撞,视觉解读更有层次。


The natural and original texture of the large area of the ground and wall allows the overall space to generate a sense of tranquility and softness. The metal blocks added makes the space form a collision between “new” and “old” in texture, and the visual interpretation is more hierarchical.

地面选择了不同颜色的手工烧制砖进行混合铺设,这种有意的“做旧”让一家新的餐厅从环境氛围的角度快速沉淀下来,浇筑上些许时光的烙印。超大面积玻璃幕墙让自然光流进室内,观景视野最大化,与自然共振。


Manually fired bricks in different colors are selected for mixing and laying on the ground. This intentional “aging” makes a new restaurant quickly settle down from the perspective of atmosphere and cast a little imprint of time. The large glass curtain wall allows natural light to flow into the room, maximizing the viewing field of vision and generating a sense of resonance with nature.

在餐厅外院的下沉餐区中,业主从海边带回来一块礁石,配置高低错落的金属桌面,让餐桌自然主义和精密制造再一次形成碰撞。


In the sunken dining area in the outer courtyard of the restaurant, the reef is braught back by a home owner from the seaside. On top of that, high and low metal tabletops allows the table naturalism to collide with the precision manufacturing.

MAS在设计Solar Term料理融合餐厅的同时,重新对人、空间、食物进行思考,因地制宜,审视与判断自然、大海、光线。打破了经验主义对自然或者工业的判断,借助“礁石现象”这一概念本身,试图表达:分离与融合、平行与交错、经验与体验。


While designing the solar term cuisine fusion restaurant, MAS reconsidered people, space and food, took measures according to local conditions, and examined and judged nature, sea and light. Breaking the judgment of empirical type on nature or industry, MAS, with the help of the concept of “reef phenomenon”, attempts to express the atmosphere of separation and integration, parallelism and crisscross and experience and practice.
